Your Ultimate Burger
With the Fourth of July holiday fast approaching, I thought this interactive article from the NYT was especially timely. I am sure millions of Americans will be creating their “ultimate burgers” this weekend, whether it be beef-, turkey-, soy-, or veggie-based. What would your ultimate burger include? Ketchup or no? Pineapple? My favorite combination would either be a Sunshine burger or an Amy‘s Bistro burger topped with avocado and salsa, plus a few caramelized onions. I’m getting hungry just thinking about it!
In other news, Danica was kind enough to honor me with the Hard Working Fod Blogger Award. Honestly, I love blogging so much that it doesn’t feel like work at all, but I am flattered nonetheless! I want to pass this award along to a few conscientious food bloggers out there:
I must admit, today’s eats were pretty flippin’ satisfying. Check ‘em out:

The nice people from Amazing Grass were nice enough to send me a few samples yesterday. Not only did I receive a few of their bars, but I also found a few Amazing Meal packets in the box. Woohoo! It didn’t take me long to bust open that goodness. Check out my review of Amazing Meal here. I am getting a tad tired of my Acai Apple granola, so I substituted bran flakes for the crunch factor.

You may recall a few months ago my mentioning that my dad received a Skippy cookbook for Christmas. As a cookbook addict, I did not hesitate to flip through its pages for some new tasty PB ideas. Today’s breakfast was inspired by its recipe for the Toasted Monkey Sandwich (aka cinnamon raisin toast with PB & banana). I didn’t look up the recipe this morning, but I am pretty sure it did not include the Ezekiel toast or Maranatha PB that I used…it was damn good though, especially when dunked in the hemp milk.

Once my chem test was complete, I flounced around town with Katie for a bit; I rewarded myself with a new white purse and some spiffy new sunglasses:) By the time I got home, I was ready for fuel. I made a quick version of Ellie Krieger’s Baked Falafel. This salad was pretty awesome. How did I survive for 20 years without tahini?

Anyone who reads my blog with any regularity knows that I am a bit obsessed with the Cashew Ginger Tofu from ED&BV (my all-time favorite cookbook). Tonight, I combined its fabulousness with another favorite dish, Peanut Butter Noodles. The end result was a party for my tastebuds.

Alright, I am off to catch up on e-mails and relax. Toodles.

Hello and welcome! I have created this blog for people who love food, especially healthful, vegetarian food.
I have just graduated from Duke University with degrees in English and psychology. I plan to pursue a master's degree in nutrition starting in Fall 2010. Ideally, I would like to combine my love of food and the written word someday as a health writer.

Congratulations on the award, and thank you for passing it onto me! You’re sweet – but I already knew that, haha.
Mmm, Monkey sandwiches, falafel, PB noodles… divine!!
Speaking of catching up….
Oh, I just entered my own for the Ultimate Burger, too! Hee hee!
Congrats on the award! you certainly deserve it.
And the falafel salad looks awesome! And cashew ginger tofu? Just from the sound of it, I think I might be an addict, too xp
i loooove falafels. maybe i’ll make that recipe! it seems relatively easy. and what hemp milk do you drink? i tried one forever ago and it was really weird. that was before i was even vegan, but i haven’t tried hemp milk since. obviously if you can drink it straight up, it must be good. if you can recommend me a brand that you think i’ll enjoy, let me know! thanks.

Anyway, my favorite sandwich would also include an original Sunshine Burger, plus toasted Ezekiel bread, tomaters, Vegenaise, ketchup, mustard, and either avocado or mozzarella Teese. This concoction really is perfection.

Awwwwww Caroline, I got tears in my eyes when I saw you icluded me. Is that weird?
Actually, I always marvel at how hard-working YOU are as a blogger, because you manage to write about/photograph most of your meals, comment on other blogs, post so often, and still have a life!
Plus, you are an awesome friend. Someday we NEED to meet up! Perhaps at that wonderful PB&Co store in NYC? Hehe I’ve never been there, but any store devoted to peanut butter *must* be good right?
I need to get that cookbook! I’ve been lucky to find Veganomicon and the Raw Foods Diet Cookbook at the library but sadly they don’t have EDBV

First of all, how are you? I’m assuming that you may or may not have started your birthday/Christmas countdown, no? I was thinking about that the other day
I’ve just been catching up on your blog and am so excited for you and your experience with shadowing an RD. It sounds very exciting!
Thank you so much for passing on this award to me! Congrats to you on receiving it – you certainly are a hard working blogger and it shows in all of those delicious meals you eat! I love your Toasted Monkey Sandwich and Baked Falafel in this post. I wish I could make every day “Eat Like Caroline” day, and I’m not just saying that! You put my bowls of cereal to shame, lady!
