Zoolight Safari
Seth and I hit up another Birmingham hot-spot this evening for a special holiday-themed event—the Birmingham Zoo’s Zoolight Safari. I hadn’t attended the Safari since my 12th birthday party, so I was pretty excited to take another trip down memory lane. Take a look at the bedazzled zoo grounds:
Does your town have any holiday-themed events?
Before gawking at the Zoolights, I did manage to eat some delicious dishes.
I dug out the Ezekiel bread this morning, which I topped with some creamy, dreamy cottage cheese.
After some holiday browsing around town, I returned home to make a Christmas-colored batch of Spinach Hummus.
For dinner, I roasted some more beets, so I busted out the rubber gloves to prevent hand staining. Apparently Seth found my beet-roasting get-up to be quite amusing, so he snapped a few pictures amidst the process.
Alright, I am off to relax.

Handling cooked/peeled beets can be messy because their strong pigment can stain your hands for several days at a time. Hence, my use of rubber gloves!
I have never been to the Bham Zoo! Gonna have to check that out
Peeling beets under running water helps with the staining too! I’ve never been to a lighted safari or even heard of anything like it–fun.
We have a “holidazzle” parade downtown every night for like the whole holiday season- it’s totally horrible. Fun to go to once in a while or every few years, but it really messes with traffic and overall functioning in the city!
Ikes, yikes– you are definitely my role model for roasting beets as I stained two of my parents cutting boards chopping red beets. Let’s just say they weren’t too psyched about having purple blotch stains on their Crate and Barrel bamboo cutting boards
The zoolight safari looks so fun! For some reason, any “normal” events are so much more magical when they occur at night.
We have the Thanksgiving Day Parade, but that already happened! There are a few holiday pop-up craft fairs that I’d like to check out.

I love your festive hummus! I’ve never roasted beets before…actually, I’ve only ever had them from the jar! Sounds yummy though and good to know I need to invest in some gloves before giving it a whirl!
Beautiful site. What does roasted beets taste like? Is it similar to squash?

Roasted beets are even sweeter than squash, and their texture is less starchy than squash; it seems as if there’s a higher water content in beets. I highly recommend trying them for yourself–they’re delicious!
I’m sure L.A. has some holiday-themed events. I should look up to it…
I also don’t know how you do it, but you’ve got me craving tofu.
